Royal Reds (Pleoticus Robustus) are perhaps the softest and most delicate of all our native shrimp species. This vibrant red shrimp never sees the light of day, preferring the cold dark depths out at the edge where the gently sloping bottom of the Gulf drops abruptly off the continental shelf. Depths from 1,200 ft. to over a half mile down are the home to this sweetest of all shrimp. Steamed, grilled, or sautéed these sweet shrimp are delicious.
Due to their more delicate texture, cook times for these shrimp must be cut almost in half. Normally they are produced from early March through June and range from the Desoto Canyon off of Pensacola all the way along the shelf’s edge to the Dry Tortugas in the Florida Keys.
Royal Red Shrimp are deep-water shrimp currently being landed in Alabama. These rose-colored shrimp are about the same size as the more familiar Brown Shrimp and attain a maximum length from 180mm (males) to 225mm (females).
Royal Reds are caught in the Gulf waters ranging in depth from 1,200 feet to 1,800 feet. Shrimping at such extreme depths requires the use of larger boats and heavier gear than does traditional shrimp trawling. Shipboard handling requirements also differ.
Royal Red Shrimp do not tolerate iced storage very well. To maintain optimum quality, they are individually quick frozen (IQF) with heads-on in refrigerated brine immediately after they are landed aboard the boat. The IQF heads-on Royal Reds are then packed in 40lb to 60lb poly-lined cardboard cartons, and stored in shipboard freezers. They are maintained frozen throughout subsequent land-based storage and distribution.
